Kale & Quinoa bowl with poached eggs

 

If there is one piece of advice I can give anyone, it would be to ALWAYS have quinoa in your fridge! Quinoa takes 15 minutes to cook and having a batch in your fridge for busy weekdays make healthy eating just that much easier.  Here I topped some delicious red quinoa on a bed of curly kale and added some shaved carrots, avocado and poached eggs.  I always like my dressings light and simple: just some extra virgin olive oil and good quality balsamic vinegar with a light dusting of sesame seeds and green onions.
