I woke up this morning wondering what I was going to eat. After browsing in my fridge for a while, I decided that today's breakfast was going to be kiwi on yogurt on toast. The first reaction from my roommate when he saw me making breakfast this morning was, "I've never seen that before".  You should give this a try, open faced fruit sandwiches are an absolute must, especially paired with some creamy coconut yogurt on top of crunchy spelt toast. I love trying out different types of breads so I treated myself this week with a loaf of spelt bread. Spelt is a wonderfully nutritious and ancient grain with a deep nutlike flavour. The spelt plant is a cousin of the common wheat and is also known as dinkel or hulled wheat. The bread is a firmer and courser in texture compared to the traditional soft "white bread", which I enjoy.

A little conventional in a sense, but a must try for any fruit lover :)

INGREDIENTS (please choose organic if possible)

  • Spelt bread
  • Coconut yogurt
  • Kiwifruit
  • Hemp seeds
  • Raw honey


Toast bread. Spread a generous heap of coconut yogurt. Top with kiwi slices, sprinkle with hemp seeds and drizzle with raw honey.
