Baked Eggs in Cast Iron

I love my cast iron and basically cook everything in it. I used teflon and all the other bad stuff in the past before I learned about the dangers of "non-stick cookware" and how they can leak chemicals into your food when cooking on high temperatures. With that said, I am very grateful to have discovered the beauty and quality of cooking with cast iron. When properly cared for, cast irons will naturally become a permanent non-stick pan with the ability to last a lifetime. Now who wouldn't want that? Remember to season them regularly with oil and please NEVER use soap to wash it. Warm water and a scrubby is all you need.

Baked eggs are always a yummy treat for brunch, but I've never actually tried making it myself until today. But no worries, it was easy peasy. On a side note about eggs: I'm sure you can see it quite clearly here, but I used an egg from two different cartons and the colours of the egg yolks are two completely different shades of yellow/orange. Well, is the colour of the egg yolk an indication of how nutritious it is? From what I know, true pasture raised chickens are more likely to produce eggs with deeper and richer coloured yolks because they eat a wider variety of pigmented foods compared to the hormones and GMO based corn and soy that are fed to hens raised in factory farms. This is why I always recommend buying organic and free range eggs, preferably direct from farmers markets as opposed to mass supermarkets chains. It really is worth the extra dollar in the end.

INGREDIENTS (please choose organic whenever possible)

  • 2 eggs
  • Cheese (of your choice)
  • Garlic
  • Onion
  • Mushrooms
  • Tomatoes
  • Scallions
  • Green pepper
  • Garlic salt
  • Olive Oil



  1. Preheat the oven to 350 degrees.
  2. In a pan, sautee the onion and garlic in olive oil until the onion becomes translucent.
  3. Throw in the mushrooms, tomatoes, scallions, green pepper and garlic salt. Mushrooms absorb moisture so I like to add a splash of water in the pan while the veggies are cooking.
  4. Crack the eggs on top of the veggies and sprinkle with cheese. Pop it in the oven for 15 minutes and you're done!
  5. Serve and enjoy :)
