Spicy Kale Quinoa Salad

This kale quinoa salad is another easy go-to recipe for me every week. They're easy to make in batches and can be stored in the fridge for 2-3 days. Remember my quinoa "fried rice"? Well, sometimes I just take that and throw in some kale, cilantro and hemp seeds and I have an instand kale quinoa salad. You can really dress your salads up any way you want. Just throw in whatever you have in your fridge, drizzle some olive oil and give it a squeeze of lime and you're done. I was in the spicy mood today so this is what I put in today's kale salad.

INGREDIENTS (please use organic whenver possible)

  • Quinoa (any variety)
  • Red Onions
  • Carrots
  • Red radish
  • Kale
  • Cilantro
  • Corn
  • Olive oil
  • Lime juice
  • Cherry pepper
  • Hemp seed
  • Flax seed
  • Dried Goji berries
  • Salt & pepper
  • Paprika
  • Chili flakes

Cook the quinoa. While the quinoa is cooking, chop up the red onions, carrots, radish, kale, cilantro and cherry pepper and place all your veggies in a big mixing bowl. I like to chop up my veggies into small bits to make it easier to serve because I've had friends complaining about chunky kale. Once that is done and the quinoa is done cooking, just add everything together into the salad and season with olive oil, lime juice and spices. Finish off your salad by sprinkling on some flaxseeds, hempseeds and goji berries for some added protein and fiber and you're done! Serve and enjoy! :)
