Chia seed & Maca Oatmeal

Oats are so underrated.  There are a million ways to dress up a bowl of humble oatmeal that will leave your tummy happy, your skin glowing and your blood sugar stable way past noon. Here is a lovely and delicious breakfast idea for the weekend.  This recipe will take you 10 minutes to create at most with fresh fruit, but if you have more time, try poaching your pears in honey and brown sugar (and perhaps a touch of ginger) for some added decadence. Ingredients (serves 1)

1/2 cup rolled oats
1 cup almond milk
1 tsp chia seeds
1/4 tsp maca powder
sliced pear
raw honey
dried goji berries
raw cacao nibs


In a saucepan, add 1 cup of almond milk with oats, chia seeds, maca powder and honey. Bring to a boil, lower heat and simmer until it reaches your desired consistency. Transfer to a bowl and top with freshly sliced pear, tangerine, goji berries and raw cacao nibs.
