Açaí Bowl

With all the blogging and recipe testing that I've been doing in my kitchen lately, it is with great happiness to announce that I recently had my very first recipe published on MindBodyGreen

Açaí berries are superfoods that are native to the Amazon and grow in parts of Central and South America. These little berries hold an extraordinarily high nutritional value and are packed with so much incredible goodness. With high concentrations of amino acids, vitamins and omega fatty acids, acai berries help us to fight against free radicals and boosts our immune system from the inside out. What's more, these little super berries pack in more grams of protein than an egg. How incredible is that?

Açaí bowls are traditionally served in Brazil blended with a liquid base and topped with banana and granola. You can use anything from almond milk, soy milk or apple juice as the liquid base. I personally love nutmilk, so that's what I used for today's breakfast. If you're lucky enough to be living somewhere where you can get your hands on fresh acai berries - do it! But, if you live in a place like New York City, it's probably easier to pick them up in the frozen foods section either as açaí pulp or frozen berries. Fresh acai juice is also a great way to incorporate extra nutrients into your diet, but becareful when picking out what you buy and read the labels. Many companies will dilute the juices and pack it with tons of sugar and very little pure açaí. When reading the labels, the first ingredient should be always be açaí.

  • Açaí berries (fresh or frozen)
  • 4 oz almond milk
  • 1 banana
  • 1/2 cup of granola
  • A sprinkle of hemp seeds
  • Dried goji berries

Blend one cup of Açaí berries and one banana with around 4 oz of almond milk (or your choice of liquid base) for around 30 seconds. It should have a smoothie-like texture. Pour the mixture into a bowl and top with fresh banana and granola. I mixed my granola with hemps seeds and garnished my acai bowl with a few pieces of dried goji berries on top. So simple and so delicious. Serve and enjoy!
